Memulai Bisnis Makanan Berskala Internasional

Di Tanah Seberang, orang Amerika Serikat-lah yang memulai revolusi untuk melayani dunia dengan penjualan makanan super cepat dalam jumlah yang banyak, lezat dan relatif murah meriah. Bisakah pebisnis di Tanah Air turut serta mengembangkan bisnis makanan seperti itu? Mari kita ikuti uraian berikut.
Beberapa malam yang lalu, saya mampir di Wal Mart – suatu supermarket dengan cabang terbanyak di dunia – beberap mile dari tempat tinggal saya di kawasan San Francisco, Kalifornia. Di dalam supermarket itu saya melewati kios McDonalds, secara otomatis saya belok dan memesan dua buah apple pie seharga USD 1 untuk to go.
Di lain waktu, saya mempunyai waktu yang cukup mepet untuk makan sebelum nonton. Di dalam mobil, saya lihat sederetan restoran dan mata saya langsung tertuju pada Panda Express, maka saya membanting stir dan mampir ke restoran cepat saji itu.
Seringkali di pagi hari yang sejuk di Tanah Seberang, saya memilih menikmati Indomie yang panas sambil mengarahkan mata dan telinga ke CNN (Cable News Network).
Uraian singkat di atas terlihat bahwa makanan tidak bisa terlepas dari kehidupan dan sebaliknya begitu banyak pihak yang menawarkan berbagai makanan sebagai salah satu bisnis mereka. Walaupun saya selalu ingin mencoba dan merasakah makanan yang belum pernah saya hadapi sebelumnya, akan tetapi untuk kondisi tertentu, pilihan saya jatuh hanya jatuh pada produk makanan tertentu saja.
Dari sudut pebisnis tentulah penting untuk menarik agar pelanggan sering, kalau tidak mau dikatakan selalu, memilih produk makanannya. Untuk itu marilah kita lihat bagaimana beberapa pebisnis memulai dan menciptakan loyalitas di benak pelanggan.
Pertama, mari kita lihat contoh pebisnis di Tanah Seberang yang saya sebut sebagai pebisbis yang revolusioner dalam melayani dunia dengan penjualan makanan super cepat dalam jumlah yang banyak, lezat dan relatif murah meriah. Pebisbis ini adalah dua bersaudara yang bernama Richard (Dick) dan Maurice (Mac) McDonald. Cikal bakal bisnis makanannya adalah satu restoran yang disebut Spedee Service System dan didirikan pada tahun 1948 di San Bernardino, Kalifornia. Melalui bisnis inilah prinsip fast food restoran modern tercipta.
Dengan prinsip ini, yang paling mengesankan adalah efisiensi. Karyawan mereka bisa bekerja sangat efisien. Setiap langkah dikoreograpfi oleh mereka dengan sangat teliti sehingga menyerupai assembly line. Hal ini meningkatkan volume produksi secara drastis, dan menghemat waktu kerja dengan tajam, tanpa mengurangi rasa kelezatan masakan mereka.
Secara keseluruhan mereka berhasil menurunkan biaya produk, sebutlah hamburger, menjadi sebesar 50%. Kelebihan seperti ini dan ditambah dengan kemampuan marketing dan bekerja sama dengan pihak lain, seperti Wal Mart yang memiliki sekitar 7.500 lokasi, membuat pebisnis makanan ini mempunyai jutaan pelanggan setia.
Kini, dalam tempo 24 jam, perusahaan ini mampu melayani sekitar 50 juta pelanggan di 119 negara melalui 32.000 lokasi dengan sekitar 450.000 karyawan. Pada tahun 2008, tahunan revenue mereka mencapai USD 22,27 miliar. Sekarang kita mengenal perusahaan ini dengan sebutan McDonald’s.
Kedua, selain makanan ala Barat di atas, di tingkat internasional, makan China juga meraja rela. Di Tanah Seberang kita mengenal Panda Express. Andrew Cherng – pemegang master’s degree dalam applied mathematics — memulai bisnis makanan ini pada tahun 1983 dengan mendirikan satu restoran yang menjual makanan China dengan motto “What more can I do for you?” Ia menambahkan, “As long as I keep doing that, I believe they will come back.”
Lebih spesifik, ia menemukan bahwa masyarakat di Tanah Seberang akan lebih menyenangi Chinese food yang sesuai dengan lidah mereka, dan dengan harga yang bisa bersaing dengan jenis restoran yang telah ada seperti McDonald’s, maka terciptalah restoran cepat saji ala Americanized Chinese cuisine yang sehat tanpa MSG.
Dengan menerapkan strategi yang cukup sederhana untuk memenangkan hati pelanggan seperti ini, kini Panda Express mempunyai 1.264 lokasi di 38 negara bagian AS, termasuk di Pentagon, Puerto Rico dan Jepang. Andrew kini mempekerjakan sekitar 13.000 karyawan dengan revenue sekitar USD 1 miliar dan ia terus bertekat akan mengembangkan usahanya hingga mendunia.
Ketiga, selain bisnis makanan yang berwujud restoran, kita juga tahu banyak pebisnis yang menawarkan produk makanan tanpa melalui restoran. Salah satu contoh produk yang sangat berhasil dan berskala internasional adalah produk mi instant, Indomie yang ditawarkan oleh PT Indofood Sukses Makmur Tbk.
Secara umum boleh dikatakan Indofood berhasil mengkampanyekan Indomie sebagai bahan makan pokok kedua setelah beras ke seluruh lapisan rakyat Indonesia, bahkan sampai kepada mereka yang tinggal di Tanah Seberang. Pebisnis yang memulai dengan nama PT Panganjaya Intikusuma pada tahun 1990 ini mengidentikkan bahwa jika seseorang mengkonsumsi Indomie, sama halnya dengan menunjukkan rasa nasionalisme Indonesia-nya. Strategi positioning, dan didukung dengan strategi yang lain, seperti pengembangan produk yang terus menerus, banyak menempatkan produk mereka sebagai pilihan pertama di benak pelanggan.
Secara internasional, Indomie telah dipasarkan di lebih dari 20 negara. Secara kuantiti, Indofood memproduksi lebih dari 10 miliar bungkus dalam satu tahun, jumlah yang jauh lebih banyak dari Nissin. Ditunjang oleh sekitar 62.000 karyawan, menempatkan Indofood sebagai produser terbesar di dunia dalam menghasilkan mi instant dengan rata-rata revenue lebih dari Rp. 10 triliun per tahun.
Kita lihat bahwa dari contoh di atas, selain Indofood, bisnis makanan bisa dimulai dari satu gerai di satu lokasi yang baik dengan strategi yang jitu, maka bergulirlah bola salju itu menjadi raksasa. Kalau begitu halnya, siapa takut untuk memulai bisnis makanan berskala Internasional?
